How to determine what religion our kids will be?

My boyfriend is Italian-Catholic and I'm Southern Baptist. I want my kids to just grow up Christan and then if they want to be one or the other/ Atheist they can choose, but my boyfriend wants them to be Catholic from birth, and his whole family agrees with him. He's born and raised in Italy, so of course they are going to want him to be Catholic, but I think it should be our kids decision. What to do?
