Whats the point of having an escape tower on Saturn V if they shoot it off into space?

Whats the point of having an escape tower on Saturn V if they shoot it off into space? I mean during my simulator it shoots off, and i've seen it shoot off in real movies too. Why shoot it off? i mean it's the escape tower for cryin out loud...
